Uya Singapore is a partnership between Yuhei Kikukawa and Shin Foods PL.

Yuhei Kikuhawa happens to be a fourth-generation family head of Nakasho Shoten Ltd, an unagi wholesaler that has been dealing with unagi for over 90 years. They also own some Japanese restaurants in Nagoya.

The eels here are specially sourced and selected to ensure quality and taste and the tare used is made using a sauce family secret recipe that has been passed on for four generations.

This is also an excellent place to enjoy Hitsumabushi, which is an unagi don paired with spices and dashi.

While it isn't hard to find places that sell eel in Singapore, it's difficult to find an establishment that does it well and Uya Singapore is one place.

Here, it is a must to try their Hitsumabushi, which is available in M or L size ($35/$45). The dish can be eaten 3 three ways — by itself, with your choice of condiments (wasabi, seaweed and spring onions) or as an ochazuke, where you mix the rice with soup to form a type of porridge. I thoroughly enjoyed trying the different versions and my favourite is the ochazuke — the broth was so rich and paired well with the eel!

I also tried the Unagi Rice Box which only comes in L ($46). It was definitely a sight to behold and the beautiful slab of eel came neatly atop a bed of white rice. It was a simple dish but it truly showcased the authentic flavours of the eel.

If you want a side dish, I suggest getting the Camberet cheese, which comes with 2 dipping sauces. An extremely good way to whet your appetite!
