Located right in front of Tiong Bahru Market and Hawker Centre, Old Tiong Bahru Bak Kut Teh is popular with both tourists and residents. The bak kut teh here is prepared Teochew-style, which means that it is a peppery, robust broth that is said to be fed to the coolies in Singapore back in the day as it has healing properties. Aside from bak kut teh, the store sells a myriad of other delicious Chinese dishes to pair along with your bak kut teh, including pig intestines soup, pig liver and vegetables.

The bak kut teh came with sizeable pieces of pork ribs that were doused in a peppery, rich soup. I was concerned that the meat would be dry but surprisingly, it wasn’t, and the fat to meat ratio was decent. One of the key components of a good bowl of bak kut teh is the soup, and I was happy to find that the one at Tiong Bahru Bak Kut Teh was well balanced and not too peppery to the point that it was choking. The staff here were also very generous and kept trying to refill my bowl even when I told them I was full. For an extra depth of flavour, dip the pork in the provided dark soya sauce, which was sweet and slightly spicy. You also can ask the staff for light soya sauce if dark soya sauce is too heavy for you.
